Vegetables:

The parts of plants that are consumed by humans or other animals as food is known as vegetables. Vegetables can be eaten either raw or cooked. It plays an important role in human nutrition.
Fresh vegetables provide necessary proteins and vitamins to the body as they are filled with antioxidants, fiber, B-vitamins, and minerals. • Vegetables are also essential for hydration and digestion as they contain lots of water.
• They also provide fuel for your body's beneficial bacteria to survive and thrive.
• Eating non-starchy vegetables and fruits like apples, pears, and green leafy vegetables may promote weight loss. The low glycemic index present in vegetables prevent blood sugar spikes that can increase hunger.
• Green leafy vegetables, such as lettuce, spinach, Swiss chard, and mustard greens, are strongly associated with decreased risk of cardiovascular disease. Cruciferous vegetables such as broccoli, cauliflower, cabbage, Brussels sprouts, bok choy, and kale; and citrus fruits such as oranges, lemons, limes, and grapefruit (and their juices) also make important contributions.
• Vegetables contain indigestible fiber, which absorbs water and expands as it passes through the digestive system. This can calm symptoms of an irritable bowel and, by triggering regular bowel movements, can relieve or prevent constipation. The bulking and softening action of insoluble fiber also decreases pressure inside the intestinal tract and may help prevent diverticulosis.
• Eating vegetables on regular basis can keep your eyes healthy, and help prevent two common aging-related eye diseases: cataracts and macular degeneration.

Caution:

• Vegetables often also contain toxins and antinutrients which interfere with the absorption of nutrients. These include oxalic acid, tannins, a-solanine, a-chaconine, enzyme inhibitors of cholinesterase, protease, amylase, etc., cyanide and cyanide precursors, and others.
• Some beans contain phytohaemagglutinin. Bamboo shoots and cassava roots contain cyanogenic glycoside. These toxins can be deactivated by adequate cooking.
• Green potatoes contain glycoalkaloids and should be avoided.
• Vegetables that are commonly eaten raw may become contaminated during their preparation by an infected food handler. When foods to be eaten raw, hygiene is much important. Such products need to be properly cleaned, handled, and stored to limit contamination.
• Leafy vegetables when stored for long period lose moisture, and the vitamin C in them degrades rapidly. So always eat they fresh.
